I think this video is a good example as to why engineers can only build one turret at a time. I mean, c'mon, the man is sitting down and racking up over 200 kills. They would dominate the world if they didn't have a limit on how many turrets they could have.

Sure, but you neglect certain factors. Engineers rarely build their turrets out in the open, so it would be difficult to get a shot at him. If he's building multiple turrets in the same area, he's going to stay in place, which means he won't be going anywhere where he'd be vulnerable.
Also worth noting, since Engineer's crit chance go up with every kill their Turrets get, an Engie with more than one Turret wouldn't take long to become Unstoppable with just their wrench.

Alright, True enough... But lets take this video in particular for example:
The Engineer is sitting with his guitar, in what looks to be a "Mountain" area, apparantly camping in a small "Alcove" there (Which makes no sense to me, I mean, if you're gonna camp, I'd think camping either in a "Boxed" area with no windows near, OR at the top of a mountain, would make sense...)
There's a water tower behind him, which has the "Advantage" of Sniper Fire taken out from it, since the truck is there.

Now, in this video, at 0:12/0:13, and 0:20, we don't hear the guns firing, but see where the bullets hit, which means there IS a sniper somewhere in the area, that can see him... But just can't seem to hit him (Kind've strange considering he doesn't MOVE much in the video... the Engineer I mean...).
I guess that actually has a simple solution: Get a better Sniper, really... *shrugs*
